Safety

• Work on a stable, non-slip surface.
• Keep fingers and your support hand clear of the cutting edge at all times.
• Use light, controlled strokes; do not force the blade.
• Point the blade away from your body during sharpening and testing.
• Dry the knife carefully after sharpening to prevent slips.
• Store the knife safely immediately after finishing.

Steps

1. Step 1: Set up the work area

   • Place a non-slip towel or mat on a flat counter.
   • Set the whetstone or sharpener securely on the surface.
   • If using a whetstone that requires water, wet it according to its instructions.
   • Have a clean cloth ready for wiping the blade.

Check: The sharpening tool does not slide when pressed lightly. · The area is clear, well lit, and dry except where the stone requires water.

2. Step 2: Position the knife at a consistent angle

   • Hold the knife handle firmly with your dominant hand.
   • Place the blade against the sharpening surface at a consistent angle, typically around 15-20 degrees for many kitchen knives.
   • Start near the heel of the blade and prepare to move toward the tip in one smooth pass.

Check: The knife feels stable in your hand. · You can maintain the same angle without twisting the blade.

3. Step 3: Sharpen the first side

   • Draw the blade across the stone or through the sharpener using light pressure.
   • Cover the full length of the edge from heel to tip with each pass.
   • Repeat several controlled strokes on the first side.

Check: You are using smooth, even motion rather than short, jerky movements. · The entire edge has contacted the sharpening surface.

4. Step 4: Sharpen the second side

   • Turn the knife over and sharpen the other side using the same angle and similar number of strokes.
   • Match your pressure and speed to the first side as closely as possible.
   • Keep passes controlled and consistent along the full edge.

Check: Both sides have been sharpened evenly. · The angle and stroke count are similar on each side.

5. Step 5: Check the edge gradually

   • Pause and inspect the edge instead of continuing for too long at once.
   • Test sharpness carefully by slicing a sheet of paper or a soft piece of produce, keeping hands clear of the edge.
   • If needed, make a few more light passes on each side.

Check: The knife cuts more cleanly than before. · You stopped once the edge improved instead of over-sharpening.

6. Step 6: Clean and store the knife

   • Wipe the blade carefully from spine to edge direction awareness, avoiding direct contact with the edge.
   • Rinse and dry the knife if appropriate for the sharpening method used.
   • Clean and dry the sharpening tool if needed.
   • Store the knife in a safe place such as a knife block, sheath, or magnetic strip.

Check: The knife is fully dry and clean. · The blade is stored securely and not left loose on the counter.
